Hi, I'm Melissa, the baker behind The Flying Cakery, and someone who has spent the last 8 years baking cakes people can't stop talking about.

It started in Karaka, where I built Karaka Kitchen from the ground up, baking for hundreds of celebrations: birthdays, weddings, anniversaries, and everything in between. Time and time again I'd hear: "That's the best cake I've ever had." Those words never get old. And they're exactly why I created The Flying Cakery.

The idea came to me three years ago, but I didn't rush it. Getting a cake to travel beautifully nationwide took time to figure out. It was actually my husband who suggested going rectangular, and honestly it changed everything. Three years of thinking, testing, and refining: that's what's in every cake.

Why I started The Flying Cakery.

I wanted everyone, no matter where they live, to be able to order an incredible cake delivered straight to their door. You shouldn't have to live near a great bakery to enjoy one. Now you don't.

Everything I bake is built around one obsession: flavour. Not just how a cake looks, but how it tastes and the moment it creates. I use quality ingredients, like Whittaker's chocolate, because your celebration deserves nothing less.
